Immunity Salad

I am not sure if any of you out there are hoarding fennel, however it is one of the healthiest vegetables you can consume.

One cup of fennel contains

  • 45 mg of sodium
  • 838 international units (IU) of vitamin A
  • 43 mg of calcium
  • 10.4 mg of vitamin C
  • 0.64 mg of iron
  • 0.041 mg of vitamin B-6
  • 15 mg magnesium

One blood orange contains 120% of the vitamin C needed daily, plus folate and fiber. If you can’t get blood oranges use any you can get, they are all good for you.

In homes across Italy this simple salad is made in the winter. It is not a cure or a preventative but we know healthy foods stimulate the immune system and if you have a knife and a bowl you have all the equipment needed to make this salad.

For each Fennel Bulb, peel three oranges.

Slice the fennel and the oranges as thin as you can get them, combine in a bowl, stir, and keep in a cool place or refrigerate for at least an hour, stir again and eat.

Simple, delicious and any leftovers will keep for a few days.

You can garnish or decorate with:

Black Olives

Fennel Fronds

Sweet red onion

Fresh basil

You can serve on a bed of any chopped green or even toss with finely sliced fresh cabbage another Vitamin powerhouse.
