
This is one of the easiest and most satisfying dishes you can make. Like Stone Soup, this version is made with found cheese scraps, as many or as few as you have.
Begin with Bechamel It is the basis for a lot of recipes including biscuits and gravy and shit on a shingle.
I wrap and freeze cheese scraps. That bit of parmesan a the end that becomes a challenge to grate, the last of the cheddar, the rind of the brie, I keep a bag in the freezer with these scraps and once put into the food processor they become the flavors of this dish.
Reserving some cheese to top the dish with melt the rest into your sauce, add your extremely al dente pasta, penne, macaroni, and shape you like. Top with cheese and butter bread crumbs if you like and bake til it bubbles and beckons you to the table.
