Blue Cheese Walnut sauce for pasta

Pasta is my daily bread, or my daily pasta. Often my go to pasta is a simple garlic and oil with some vegetables, I never tire of it.

Every once in a while I go rich, decadent, caloric and worth it. This sauce is one I used to make in a restaurant and I think we go 18 a plate for it. It is almost too simple to make at home.

  • 1/2 cup cream per person (heavy or whipping cream)
  • 4 ounces or 100 grams of blue cheese per person
  • 1/2 cup walnuts per person
  • A little butter
  • possible add ins, fresh thyme or parsley to infuse the cream

Roughly chop your walnuts and toast in butter. Then gently warm your cream melting in the cheese. Add herbs at this stage if desired. Toss the pasta in the sauce reserving a few of the nuts to garnish, plate and enjoy.
